Preheat your oven to 425°F (220°C).Remove the chicken from its packaging and pat it dry with paper towels. This helps the skin crisp up during                 roasting.

Rub the chicken all over with olive oil. Season the inside and outside of the chicken with salt, pepper, dried thyme, and dried                    rosemary.

Place the halved lemon, garlic cloves, and fresh herbs inside the chicken cavity. This not only adds flavor but also helps the chicken cook from the                            inside.
