INGREDIENTS

– 1 tablespoon olive oil – 1 onion, diced – 2 carrots, diced – 2 celery stalks, diced – 3 cloves garlic, minced – 1 cup dried green or brown lentils, rinsed and drained – 6 cups vegetable broth or water – 1 can (14 oz) diced tomatoes – 2 bay leaves

Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
