INGREDIENTS

– 12 oz (340g) pasta (spaghetti, fettuccine, or your choice) – 2 tablespoons olive oil – 4 cloves garlic, minced – 1 small red onion, thinly sliced – 1 medium carrot, julienned or thinly sliced – 1 medium zucchini, julienned or thinly sliced – 1 medium yellow bell pepper, thinly sliced

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Add sliced red onion, julienned carrot, zucchini, and yellow bell pepper. Sauté for 3-4 minutes until the vegetables are slightly tender but still crisp.

In a pot of boiling water, blanch the broccoli florets for 2 minutes. Drain and set aside.

In the skillet with the sautéed vegetables, pour in heavy cream and vegetable or chicken broth. Stir to combine.

Add the cooked pasta, cherry tomatoes, blanched broccoli, and snap peas to the skillet.

Toss everything together until the pasta and vegetables are coated evenly with the sauce.
