– 1 cup quinoa – 2 cups water or vegetable broth – 1 bell pepper, diced (any color) – 1 cucumber, diced – 1 cup cherry tomatoes, halved – 1/4 cup red onion, finely diced – 1/4 cup fresh parsley, chopped – 1/4 cup fresh cilantro, chopped (optional)
