– 6 large egg yolks – 3/4 cup granulated sugar – 1 cup mascarpone cheese, at room temperature – 1 1/2 cups heavy cream – 1 1/2 cups brewed espresso or strong coffee, cooled to room temperature – 2 tablespoons coffee liqueur (optional) – 1 teaspoon vanilla extract

In a heatproof bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

Place the bowl over a pot of simmering water (double boiler) and continue whisking constantly for about 8-10 minutes.

Add the mascarpone cheese to the egg yolk mixture and gently fold until smooth and well combined. Set aside.

In a separate mixing bowl, whip the heavy cream with vanilla extract until stiff peaks form.

Gently fold the whipped cream into the mascarpone mixture until fully incorporated. Be careful not to overmix.

Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out with a spatula.

Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone mixture.

Before serving, dust the top of the tiramisu with unsweetened cocoa powder using a fine-mesh sieve.
